Brouwerij Dutch Bargain
Verstopt in het Zeeuws-Vlaamse landschap vind je Dutch Bargain, een brouwerij van eigenzinnige bieren. In 2011 sloegen drie bierbrouwers (Marc Menue, Stijn Jordans en Thibo Baccarne) de handen ineen en legden de basis voor Dutch Bargain. Hun doel? Een nieuwe dimensie geven aan de mondiale biercultuur. In een snelgroeiende branche is er maar één manier om op te vallen, het maken van kwaliteitsbier met innovatieve eigenwijsheid. Ruim een decennium later heeft Dutch Bargain zich ontwikkeld tot een brouwerij met verkooppunten door heel Nederland en in de grotere Belgische steden. Ze hebben een pastry stout uitgebracht die gezoet is met een bijzondere smaakstoffenlading en ook erg alcoholisch is.
Het is een klein blokje met een lange naam. Een hele mondvol... Met 18% behoorlijk zwaar voor zo een lichtvoetige naam. Hoe smaakt het?
Het zwarte bier heeft een zweem van rood over zich. Het schuim is bruin, maar is met een beetje fantasie ook wel een beetje roze te noemen. De geur is zoet. Doet wat denken aan drop. Zoet en wat alcohol zurigheid. Een zuurtje zoals bij een zure mat? Maar hoe smaakt het?
Als ik een slok wil nemen komt er al een alcoholdamp in mijn mond nog voor het bier mijn lippen raakt. Het mondgevoel is dik en prikkelend. De smaak is niet echt stout of koffie, laat staan red velvet of vanille. Alhoewel vanille herken ik wel. Bij een tweede poging om een slok te nemen komt er weer een zoete damp die me de adem beneemt. Dit is een sterk bier. De derde keer houd ik m'n adem in. De smaak is door de alcohol ver naar de achtergrond verdreven. De smaak is eigenlijk zoet. Rode fluweelachtige witte chocolade met vanille en regenboog hagelslag donut? Hoe smaakt dat eigenlijk?
Het mondgevoel is stroperig, en branderig. Ik herken zoetheid, vanille en iets van bessen, kersen of rood fruit. De afdronk en nasmaak lijkt wat te doen denken aan chocolade, maar dan nog mis ik koffie. En stout? Nou ja het is wel een goede Pastry Stout eigenlijk. Al brandt het lang na voor in mijn mond.
Het bier is zoet, maar is het te vergelijken met een frappuccino?
Een frappuccino kan het beste omschreven worden als een ijs cappuccino. Een frappuccino is hierdoor een koud drankje, terwijl een cappuccino uiteraard een warm drankje is. Dit ijsdrankje bestaat uit de nodige ingrediënten. Je hebt uiteraard ijs en koffie voor een frappuccino nodig, maar ook nog melk, zoetstoffen en in sommige gevallen slagroom. Een opvallend kenmerk van een frappuccino is dat je ‘m helemaal naar wens kunt maken. Zeker als je zelf een frappuccino maakt, kun je bijvoorbeeld meerdere zoetstoffen toevoegen. Je bepaalt hiermee volledig zelf wat de smaak van de frappuccino wordt. De geschiedenis van de frappuccino Voor de geschiedenis van de frappuccino moeten we eerst kijken naar een frappé. Dit is een koffiedrankje dat in Griekenland erg populair is. Dit drankje wordt van oploskoffie gemaakt, waarbij de oploskoffie met koud water aangevuld wordt. Een frappé is dus net zoals een frappuccino een koud drankje. Dit drankje werd in Griekenland erg populair, onder meer door marketinginspanningen van Nestlé. Doordat veel toeristen in Griekenland met dit drankje in aanraking kwamen, kwam dit drankje ook naar onder meer ons land en België. Voor de frappuccino zoals we deze nu kennen, moeten we vooral naar Starbucks kijken. Deze koffiegigant is voortdurend bezig met het ontwikkelen van nieuwe koffiespecialiteiten. Koffiespecialiteiten die bij voorkeur uniek zijn, op het randje van ‘normaal tot gek’ zitten en een specifieke doelgroep aanspreken. Op basis van de frappé is Starbucks haar eigen frappuccino gaat ontwikkelen. Deze frappuccino werd in eerste instantie voorzichtig getest, maar het was al snel duidelijk dat dit drankje op veel lovende woorden kon rekenen. Vanaf dat moment maakt de frappuccino standaard onderdeel uit van het aanbod van Starbucks. Uiteraard doet een goed voorbeeld volgen. Andere koffieketens zijn ook hun eigen frappuccino’s gaan ontwikkelen, maar deze komen nooit exact overeen met de Starbucks frappuccino. Dit komt vooral doordat Starbucks haar ingrediënten en werkwijze nooit openbaar maakt. Voor andere ketens is het daarom gissen hoe de frappuccino van Starbucks precies bereid wordt. Verschillende smaken frappuccino Als je nu naar de website van Starbucks gaat, kom je allerlei verschillende smaken tegen. Enkele van deze smaken zetten we voor je op een rijtje: Caramel frappuccino. Bij dit heerlijke ijskoude drankje maakt Starbucks gebruik van karamel. Door de karamel krijgt dit drankje een zoete smaak. Java Chip frappuccino. Deze frappuccino kenmerkt zich door slagroom aan de bovenzijde. De slag room wordt ook nog voorzien van chocoladesaus. Mocha frappuccino. De Mocha frappuccino is te vergelijken met mokka koffie. Dit is speciale koffie die haar oorsprong vindt in een kleine plaats in Jemen. Vanuit die plaats is deze bittere maar toch zoete koffiesmaak erg populair geworden. Ook Starbucks maakt graag gebruik van deze koffiesoort. Cookies & Cream frappuccino. Deze frappuccino bestaat onder meer uit stukjes koek en een heerlijke slagroom laag. Door de stukjes koek is dit een aardige caloriebom, maar de smaak is wel overheerlijk te noemen. Strawberries & Cream frappuccino. Zoals de naam al doet vermoeden, vind je in dit ijskoude drankje aardbeienstukjes terug. Door de combinatie van aardbei en espresso ontstaat er een unieke smaaksensatie. Dutch Bargain iced Coffee Connaisseur, Moi? Frappuccino V3 is een zwart gekleurde stout, gebrouwen in Nederland. Deze versie is een uit een reeks van drie verschillende bieren gebaseerd op frappuccino. Deze variant richt zich meer op s'mores met kokosnoot en pandan bladeren. Hij beschikt over een vrij zoet karakter, gepaard met de licht tropische toetsen van kokosnoot. Ze liggen op een bed van licht bittere koffie tonen. Op https://www.beerdome.nl/nl/dutch-bargain-iced-coffee-connaisseur-moi-frappucc.html staat het mooie bericht: "404 ERROR Uh oh! Volgens mij ben je verdwaald." Ja dat doe je wel met een bier van 18%!
Maar is het lekker? Is het iets om op café te doen? Is het nog bier? Voor mij is het te zoet. Ik mis hopbitterheid. Het plakt. Het is nou niet echt een ruw bier. Het is zoet snoep in een sterke drank verpakt. Niet iets waar ik goed op ga. Het is misschien wel een verwarmend bier voor de koude tijd van het jaar.

Frontaal Brewing Co. heeft een imperial pastry stout van 12% gebrouwen en in een blok gestopt. Bij het openen ruik je alcohol en cake. Het bier schenkt roodzwartbruin, maar in het glas lijkt het toch echt zwart, met gebroken wit-lichtbruin schuim. De ingrediëntendeclaratie doet mijn wenkbrauwen optrekken. Wat zit in het bier? Het bier heeft de volgende ingrediënten: water, gerstemout, hop, lactose, tinctuur van spekkoek, en gist. Barrels : port, rye whiskey, all grain.
Het bier heeft een dik mondgevoel. Dat voelt goed. De smaak is redelijk mild. En er zit een lichte zweem van whiskey in. Dat zit ook in de afdronk. Door het mondgevoel en de alcoholtinteling merk je dat je geen gewoon bier drinkt. De zware 12% valt echter niet zo op. Ook is er niet veel koolzuur te bemerken. Je zout het best snel weg kunnen tikken. Dat lijkt me niet verstandig. Volgens mij is het zo een zwaar bier dat net als een zware chocoladetaart je wel weg wilt eten, maar niet kan doen.

De stad kent op het moment maar liefst 16 ondernemingen die zich ‘brouwerij’ noemen en is daarmee het bier-powerhouse van de provincie Noord-Brabant. Roel Buckens (Zevenbergen, 1992) is de oprichter van Frontaal. Naar verluidt is hij al van jongs af aan gefascineerd door smaak. Vanaf het moment dat hij ‘of legal drinking age’ is, is hij met bier bezig. Zelf brouwen doet hij sinds zijn terugkeer van een reis naar Australië, waar hij onder meer werkte in een brewpub. ... Brouwer en eigenaar Roel Buckens mag dan wellicht een autodidact zijn, een specifieke opleiding voor bier en brouwen zoek je vergeefs op zijn cv: zijn ambacht neemt hij verrekte serieus. Frontaal is eredivisie waar het gaat om investeren in technologie en kennis voor kwaliteit. Een voorbeeld? De brouwerij beschikt over een extra brede maischkuip. Dit heeft als voordeel dat de filtering van het beslag makkelijker verloopt, zeker voor het brouwen van zwaardere bieren. De uitgekiende brouwinstallatie maakt het een geliefd adres voor huurbrouwers. Maar het belangrijkste waar die kwaliteitsgerichtheid van Frontaal voor zorgt: lekker bier. Het bier is zwart als ik het inschenk. Het schuim is bruin, maar verdwijnt snel. Het drinkt makkelijk weg. Er zit iets van een branderigheid in de afdrink. Het ligt ook wel zwaar op de maag. De geur is kruidig. Het doet wat denken aan shag en aan een kruidige tripel. Het mondgevoel is licht en wat waterig, en alcoholerig. Het is niet dik of zalvig. Ook weinig koolzuur of moutig of gistig of zoet of hopbiterheid. Eigenlijk heel weinig. Wat zit erin? Er zit heel veel in!!

Dat is dan weer aandoenlijk zo een brouwerij-stel, maar goed het bier zelf deed e weinig. De naam deed me wel denken aan de film 'the good the bad and the ugly':

Ontelbare close-ups, talloze langzaam opgebouwde scènes en talloze vreemde totaalshots maken van deze film een experimenteel staaltje avant-gardecinema. Het verhaal is volledig ondergeschikt gemaakt aan het beeld. Het is dit keer slechts een achtervolging door het wilde Westen waarbij de personages van de ene locatie naar en van de ene actiescène naar de andere lopen. Terwijl de vorige twee delen zich nog afspeelden in een niet nader genoemde periode, is deze film duidelijk geplaatst tegen een historische setting. De Amerikaanse Burgeroorlog is een perfecte achtergrond voor het verhaaltje van hebzucht en verraad. Het is een duidelijke studie van het slechte in de mens en de aanwezigheid van een zinloze oorlog geeft de film een extra dimensie. De muziek van Ennio Morricone is beroemd geworden en het fluitdeuntje is in 2020 nog onverminderd populair. In deze film is de muziek nadrukkelijker aanwezig dan in de vorige delen. De combinatie tussen beeld en muziek begint hier zelfs opera-achtige proporties aan te nemen. Voor een aantal scènes is aparte muziek geschreven die speciaal bij die ene scène past. Die scènes worden dan gedragen door de muziek zoals zangpartijen dat bij een opera doen. Volgens Leone zelf was de aanwezigheid van Tuco (Eli Wallach) de grootste bijdrage aan de film. Hij zorgt voor een komische noot en geeft tegengas aan de sombere dramatiek en al het geweld. Eastwood en Van Cleef kopiëren eigenlijk hun rollen uit de eerdere twee films. Eli Wallach zet als hyperactieve, druk pratende, diepgelovige, laffe, achterbakse, hebzuchtige en vooral smerige bandiet een humoristisch personage neer dat nog niet eerder in een western voorkwam. Hij is eigenlijk een soort parodie op de slechtheid van de mens. ... Il Buono, il brutto, il cattivo werd opgenomen in Italië (in Lazio) en in Spanje (o.a. Burgos en Tabernas).... De correcte vertaling van de Italiaanse titel is eigenlijk De goede, de lelijke en de slechte, maar voor de Engelse titel werden de lelijke en de slechte verwisseld.... Alleen de drie hoofdrolspelers Clint Eastwood, Lee Van Cleef en Eli Wallach spraken hun tekst in het Engels in. Ik had een zuur bier verwacht. Maar inderdaad het bier smaakt overdreven zoet, met een duidelijke kersensmaak. Niet die snoepkersjes of zure kersen, maar vanille en kers. Aardbei herken ik dan weer niet er in. De lactose is dan wellicht weer wel een naar die bierstijl?
Overigens zijn de kersen , aardbei en vanille echt ingrediënten in dit bier en niet (wat ik eigenlijk dacht) een smaakomschrijving. Wat dat betreft is het bier goed gelukt, aangezien het smaakt naar de ingrediënten. Maar het is geen kriekenbier. En met ruim 10% ook geen doordrinker. Het doet niet denken aan een radler, Smirnoff Ice of Bacardi Breezer. Het is een zwaar bier, met een zoete smaak,die mij doet denken aan een pastry stout. Bestaat er zoiets als een pastry quadrupel?
Het zwarte blik van 440 ml heeft een sticker als etiket. Daarop staan gouden letters op de voorzijde en achterzijde heeft zwarte letters op een gouden kader. Het blik geeft eigenlijk best weinig informatie.
Het zwarte bier heeft bruin schuim. De geur doet denken aan chocoladebrownies. De smaak is zoet en plakkerig. Is het een Pastry Stout? Het schuim verdwijnt trouwens snel. Het bier is echt heel erg zwart, pikzwart. Het mondgevoel is dik en zeker niet waterig. Het bier doet ook denken aan zoete drop. Het is met 12,5% behoorlijk zwaar, maar dat proef je niet.
De geur doet me denken aan iets, maar ik weet niet wat. Bestaat er zoiets als zoete pindakaas? De nasmaak vind ik wat minder.
Ze hebben ook een Stocking Filler Nostalgia – 12% Imperial Stout – 440ml Can Chocolate Orange Imperial Stout met 12%. Die heb ik (nog) niet geproefd.

Fijn om op untappd ook eens een beschrijving te lezen. Dat gemis is wat me tegenstaat van die app. Het maakt drinken een spelletje. Scoren met hoeveel je drinkt vind ik principieel niet goed. Het aandacht besteden aan een degustatie en dat goed verwoorden vind ik wel waardevol. Hazelnoten vind ik ook een smaakomschrijving die past. Nutella, dat is waar de smaak mij aan doet denken!!

Voordat we kijken naar de speciale smaak van de Russian Imperial Stout is het leuk om even het verleden in te duiken. De naam verraad natuurlijk al het land voor oorsprong, toch is het interessant om te weten hoe dit tot stand is gekomen. In januari 1698 werd er een missie georganiseerd door Peter de Grote. Hij besloot om de banden aan te halen met Engeland. De 25-jarige leider van de missie was een man genaamd Peter Mikhailov. Tijdens zijn reis ontwikkelde hij een echte voorkeur voor Brits bier en tabak. Op deze reis en daarna heeft Peter de Grote veel gedaan om de Russische handel met West-Europa, en met name Groot-Brittannië, uit te breiden. Zijn voorliefde voor Brits bier zou uiteindelijk overgaan op een laatste Russische Catherine de Grote. In de jaren sinds Peter zijn bezoek aan Londen werd er een nieuwe stijl bier ontwikkeld die een Porter werd genoemd. There are many kinds of stouts worth mentioning that have nothing to do with dark beer porter, including:
Dry or Irish stout: This style is what most people associate stout with today. It’s a non-sweetened—standard—stout, boasting a drier flavor than English or US versions.
Milk or sweet stout: Such style contains lactose—a sweetener obtained from milk. Because beer yeast can’t ferment lactose, it instead adds volume and sweetness to the drink. It was a popular type pre-World War II, where doctors would prescribe it to nursing mothers.
Oyster stout: Due to the popularity of oysters in taverns and public houses during the 18th century, a man named Ernest Barnes thought to combine them with stout. By incorporating oyster concentrate with stout, he created a formula still used today. Also dubbed as ‘Russian Imperial stout,’ Imperial stout is another sub-category to this potent brew.
It came to be during the 18th century, London, England, following inspiration from the Baltic Porter beer. The type has a high alcohol content of at least nine percent abv and is among the darkest beers available.

Pastry stouts are somewhat similar to the milkshake hazy IPAs. Milkshake IPAs are also loaded with a high amount of adjuncts such as fruit, milk sugar (lactose), syrups and other extreme ingredients. Their appreciation among beer lovers is undeniable.

Pastry stout is a modern craft beer phenomenon that takes specialty beers to the extreme. Packing massive sweetness and the flavors often found in desserts and pastries into a strong dark stout, the beers are often sought-after commercial creations popular in the modern era of social media. While having a cult following, the relatively young style has few rules and emphasizes brewer creativity in executing the concept. Many breweries make one-off versions and are constantly trying new variations, which makes it difficult to define the beer in the traditional sense. It is best thought of as an ingredient-driven specialty beer with several commonly used attributes.
As a specialty beer, the base style often cannot be defined as a classic style, like imperial stout. Rather, it is dark and usually quite strong, but is also sweet, thick, and heavy. Due to the darkness, it is called a stout, but often the beers lack the strongly roasted character typical of most stouts. The notion of balance is also somewhat hard to pin down since the essence of the style is a beer that is unbalanced in sweetness, possessing well beyond the typical sweetness level of other beers.
Neither the Beer Judge Certification Program (BJCP) nor the Brewers Association (BA) list pastry stout as a named style, preferring to let existing specialty and experimental styles address it. I think this reflects the fact that the beers can vary widely and that they are very ingredient-driven. The most typical place to put pastry stouts in a BJCP competition would be category 30D Specialty Spice Beer, which allows variations of spice, herb, and vegetable (SHV) beers (a base style with a number of SHV ingredients) with sugars, sweeteners, and unfermentable sugars added. The base styles in these beers can be used loosely, such as stating a style family (e.g., “stout”) or giving a general description of the beer. Versions not using spices might be placed in 31B Alternative Sugar Beer, and those versions using fruits along with spices should go in 29C Specialty Fruit Beer (which allows a fruit and spice base beer, along with additional sweeteners). While beers that are today called pastry stouts have been made for some time, they really didn’t start to be noticed until after 2000. I recall trying beers like Southern Tier’s Choklat and Mikkeller’s Beer Geek Breakfast in the mid-2000s, and finding them very sweet for their description. The trend of making experimental beers accelerated after hazy IPAs started to be made into milkshake IPA variations in the mid- to late-2010s, and sweetness caught on as a desirable beer component after years of consumers chasing bitterness in IPA, sourness in wild beers, and barrel-aged beers of all forms.
The name pastry stout seems to have first been used around 2017 as a somewhat derogatory term to criticize these excessively sweet beers, but the name stuck and was actually embraced by those making it to the point where it routinely appears on the label of commercial beers. Articles about the style started appearing in 2018 and 2019 and more brewers are creating these variations based on customer demand and excessive hyping on social media. Sensory Profile
Pastry stouts are meant to invoke the mental impression of a sweet dessert (or even a sweet breakfast). Since they are called stouts they should be dark but often don’t have the heavily roasted or burnt flavors of some stouts. As they mention pastries, they should be sweet and have the flavors associated with pastries or desserts. They should be fairly strong, at least 8%, often over 10% ABV, and be very sweet with a high finishing gravity. Really, these are the only things that seem to be generally accepted as guidelines among brewers (I hesitate to call them rules since they seem very flexible).
The dark flavors can have coffee, dark chocolate, and cocoa qualities, and are often combined with very dark crystal malt flavors that have caramel, dried or dark fruit, and burnt sugar flavors. There typically are not strongly roasted, acrid, harsh, tarry, ashy, or burnt flavors. This is similar to how beers like black IPA and schwarzbier use darker malts and grains without bringing in the sharp notes.
These beers typically have thick or chewy body and mouthfeel, often with silky or dextrinous qualities. The high sugar content can give a heavier mouthfeel as well, and can sometimes approach something cloying, although the alcohol tends to offset this impression. The alcohol level is high, which often makes it similar to an imperial stout in strength but the balance will seem very different since the bitterness levels are usually quite restrained to avoid challenging the sweetness for dominance. Het bier ruikt overigens duidelijk. Dat is een bier dat in een druk café echt wel opgemerkt wordt. Als ik m'n lippen aflik merk ik drop op. De nasmaak doet denken aan Nutella. De hoofdsmaak vind ik wat lastiger om te bepalen.
Het einde van het glas komt in zicht, maar het effect van 12,5% begint merkbaar te worden. Ik vind het wel prima zo. Blijkbaar is dit soort zoete bier een stijl of soort die trending is. Mij kan het helaas niet zo bekoren. Ik had meer van de pindakaas verwacht/gehoopt.
Het bier is zwart, met bruin schuim. Man, wat ruikt dat zoet! Karamel? Hopjesvla?
Nu is het mondgevoel wat waterig. Ik had het crèmerig verwacht, maar het is geen mlkshake. De smaak die als eerste opvalt is de leegte. Haast waterig te noemen?? In de afdronk herken je echter heel duidelijk de marshmallow en de chocoladebitterheid. Het is een bijzonder bier. Erg zoet. Iets voor een toetje?

S'mores: A s'more is a campfire treat popular in the United States and Canada, consisting of one or more toasted marshmallows and a layer of chocolate sandwiched between two pieces of graham cracker. It is used as a filling in baking or normally molded into shapes and coated with corn starch. The word "marshmallow" comes from the mallow plant species (Althaea officinalis), a herb native to parts of Europe, North Africa, and Asia which grows in marshes and other damp areas. The plant's stem and leaves are fleshy, and its white flower has five petals. It is not known exactly when marshmallows were invented, but their history goes back as early as 2000 BCE. Ancient Egyptians were said to be the first to make and use the root of the plant to soothe coughs and sore throats and to heal wounds. The first marshmallows were prepared by boiling pieces of root pulp with honey until thick. Once thickened, the mixture was strained, cooled, then used as intended.[3][4] Whether used for candy or medicine, the manufacture of marshmallows was limited to a small scale. Confectioners in early 19th century France pioneered the innovation of whipping up the marshmallow sap and sweetening it to make a confection similar to modern marshmallow. The confection was made locally by the owners of small sweet shops. They would extract the sap from the mallow plant's root and whip it themselves. The candy was very popular, but its manufacture was labour-intensive. In the late 19th century, French manufacturers thought of using egg whites or gelatin, combined with modified corn starch, to create the chewy base. This avoided the labour-intensive extraction process, but it did require industrial methods to combine the gelatin and corn starch in the right way.[11][12] Another milestone in the production of marshmallows was the development of the extrusion process by the Greek American confectioner Alex Doumak, of Doumak Inc., in the late 1940s. In this process, which Doumak patented in 1956,[9] marshmallow mixture is pumped through extrusion heads with numerous ports aligned next to each other which form continuous "ropes" of marshmallow. This invention allowed marshmallows to be manufactured in a fully automated way and gives us the familiar cylindrical shape of today's marshmallow. To make marshmallows in large quantities, industrial confectioners mix water, sugar, and corn syrup in massive kettles which are then heated to a precise temperature and cooked for a precise time. This mixture is then pumped into another kettle to cool. Once the mixture has cooled enough to not denature the gelatin, the re-hydrated gelatin is added and blended in. To give the marshmallow its fluffiness, it is pumped through a blender while air is pumped into it. At this point, the mixture still needs to be cooled further so that it will hold its shape when extruded; it is pumped through a heat exchanger prior to being pumped through the extrusion heads and onto a wide conveyor belt. The conveyor belt is coated in corn starch and more corn starch is dusted onto the top of the marshmallow extrusion as it passes down the conveyor. A large knife the width of the conveyor is located at the end of this conveyor table that chops the extrusion into the size marshmallow desired. The pieces will then be tumbled in corn starch in a large drum, allowing the marshmallow to form its familiar skin and to allow pieces that did not get cut all the way to break apart.[12] Marshmallows, like most candies, are sweetened with sucrose. Het zwarte bier heeft bruin schuim dat redelijk snel verdwijnt. Het bier is prikkelend, maar niet echt door veel koolzuur. Het voelt cremerig dik en vlak aan, maar prikkelt toch. De smaak heeft een bittertje, maar dan geen hopbitterheid maar meer iets zoals chocolade. Ook heeft het iets van branderigheid in zich. Het doet wat denken aan peperkoek. Amandel en vanille zou ik er misschien ook wel in kunnen herkennen? Zou er vanille of vanilline in zitten?
